What can I eat for breakfast on the AIP diet?
Anything you want to eat! I generally think of breakfast as the first meal of the day. It’s a mindset shift to get away from thinking that you need to eat ‘breakfast’ foods in the morning. However, if you need an AIP breakfast idea, it’s nice to have these AIP Blueberry Pancakes to serve to your family and friends. These AIP pancakes are so delicious; I assure you they will be a big hit!
Is coconut flour an AIP?
Yes. Coconut is AIP therefor the flour is also AIP. Coconut flour is just ground coconut.
Is Cassava AIP?
Yes. And again, cassava flour is just ground cassava. There’s also tapioca flour in this recipe which is the starch of the cassava root. It’s also AIP. I talk more about the difference in the two over in this post.
Is baking soda AIP compliant?
Yes. Please note that baking soda is compliant but baking powder is not. Baking powder includes baking soda but is also has cornstarch. Please be careful of not using the two interchangeably.
I used Beth Blends grain free flour blend (which is also AIP) that includes not just tapioca, cassava and coconut flour but also baking soda and cream of tartar. This makes this AIP pancakes recipe very easy. No tedious measuring multiple flours. Just grab this one bag and add the additional ingredients. How to make AIP Blueberry Pancakes
1. Combine the flour, cinnamon, salt into a large mixing bowl.
2. Next add the oil, maple syrup and coconut milk and stir until combined. The batter should be almost completely lump free. Then fold in the blueberries.
3. Heat a nonstick skillet over medium to medium low heat. Once the pan is hot, pour 1/4 cup of the batter into the pan. Let cook for 1-2 minutes or until you start to see bubbles form and pop all over the AIP pancakes. Flip then let cook for another minute or two. Once finished cooking, transfer the AIP pancakes to a plate to serve immediately.
Tips for making the best AIP Blueberry Pancakes
- These cook fast, so you don’t want the pan too hot.
- These AIP pancakes do well as leftovers and in the freezer.
- Cooking times may vary due to different stovetops and types of skillets.
- If the AIP pancakes are coming out gummy, they may need additional cooking time.
- Switch out blueberries for another berry like chopped strawberries, raspberries, or blackberries. You can also substitute with chocolate chips (please note that chocolate is an AIP reintroduction)

- 1 teaspoon Ground Cinnamon optional
- 1/4 teaspoon Sea Salt
