    The only way to make avocados better is to turn them into AIP Guacamole. This paleo guacamole is nightshade free and made with only fresh ingredients for an authentic flavor. This recipe fits the Paleo, AIP and Whole30 diets.

    How do you make guacamole dip from scratch?

    I had never tried guacamole or even seen an avocado until I first visited California. It’s hard to believe now but 20 years ago, they weren’t quite as popular. Avocados are so abundant here in California that people give them away. I took advantage but I had no idea how to make guacamole so I would add the packets of spices (and I now know – chemicals!) to try and make my own guac.

    This is AIP guacamole is so easy to make and there’s no chemicals included, just fresh ingredients. If you can chop and mix, then you can make this recipe. All you need to do is chop up your shallots, garlic and cilantro then mix them with your mashed avocado, lemon and salt. Super easy! It’s so easy that I can’t believe someone didn’t intervene at the grocery store and stop me from buying those dumb packets!

    Yes! This recipe is made with whole ingredients that fit the Whole30 template.

    What do you eat with guacamole dip?

    Guacamole is the perfect side to some AIP Nacho Cheese Fries (recipe over at autoimmunewellness.com) or with plantain/cassava chips.

    How to make AIP Guacamole

    1. Combine all the ingredients into a medium size bowl. Set aside for about 30 minutes to let the flavor combine.

    2. Serve with plantain chips or as a side to AIP Nacho Cheese Fries.

    Tips to make the best AIP Guacamole

    • Use a fork to mash your avocado.
    • Ripe avocados are usually somewhat firm but have some give.
    • Be careful when slicing open an avocado. Don’t hold it in your hand when slicing open. Knives have been known to slice right through the avocado and your hand.

    Ingredients

    • 1 large Avocado chopped
    • 1 Shallot finely chopped
    • 1 Garlic clove peeled and finely chopped
    • 1 Lime Juice and zest (lemon is a good substitute)
    • 3 tablespoons Cilantro chopped
