Herbs de Provence is one of the most fragrant of spice mixtures. Some blends have fennel seeds, which is not AIP compliant. This special blend is totally AIP friendly and smells amazing.
This blend is typical of the Provence region of France, which is famous for it’s lavender fields. I have a handful of lavender growing in my yard. Hardly a ‘field’ but it’s plenty for my kitchen. I’ve been trying to find more ways to use lavender in my cooking. I use it a lot of my homemade kombucha and now this spice blend.
I don’t usually leave my kitchen for recipe post photos but I just had to show you my lavender. It’s pretty hardy in San Diego and even in December the bees just love this plant. It’s so fragrant that I completely understand. My neighbor is a beekeeper and has a few hives in her yard. I bet that honey tastes just like lavender!
This spice blend is perfect for chicken or fish. I’ve been experimenting with roasted chicken so I’m hoping to have a Roasted Chicken Provencal recipe for you soon.
