    Here’s a simple treat that uses the best of summer produce, AIP Instant Pot Strawberry Rhubarb Compote. All you need is 4 ingredients and 20 minutes to enjoy this AIP dessert.

    How long does strawberry compote last?

    It never lasts long in our house, but it can last about 3 days in a sealed container in the fridge.

    What can you do with compote?

    So. Many. Things! It makes a great topping for ice cream, cake, waffles, yogurt, or on its own with a spoon.

    Can you freeze strawberry compote?

    Yes. This is one of those recipes that freezes wonderfully. I like to put in smaller mason jars and then pull them out as we need them. However, fruit doesn’t last much past a year.

    How to make AIP Instant Pot Strawberry Rhubarb Compote

    1. Add 1 pound of strawberries, rhubarb, honey to the instant pot and hit sauté on more. Let cook while stirring occasionally for about 15 minutes. The rhubarb should have softened at this point.

    2. Next add the lemon zest and remaining strawberries to the pot. Continue cooking for another 10 minutes or until the strawberries have softened.

    3. Remove from the heat and serve immediately, at room temperature or chilled.

    Tips for making the best AIP Instant Pot Strawberry Rhubarb Compote

    • Makes a great topping for ice cream, cake, waffles, yogurt, or on its own with a spoon.
    • Make sure the rhubarb is about 1/4 inch and smaller than the strawberries pieces. Making sure that it’s in smaller pieces also means a shorter cooking time.
    • If you need a kitchen scale to weight strawberries, I use this one. A kitchen scale has really come in handy for weighting more than just strawberries in this recipe. If you cook frequently, this is a tool you’ll use over and over.
    • If you need an Instant Pot, try this one. It has an air fryer attachment!
