These easy AIP Lace Cookies use just a handful of ingredients and can be made in under 30 minutes. Plus, they taste amazing. It’s hard to believe these are totally AIP.

Can you have chocolate on AIP?
Nope but you can have carob. Carob is a chocolate substitute commonly used in AIP baking.
Is vanilla extract AIP?
According to The Paleo Mom, ‘vanilla gets a pass because the seeds are so small that they are intact when you consume them, putting vanilla bean (which is not a legume) in the same category as berries. Moreover, vanilla and vanilla extract is also okay, provided it’s certified gluten-free (often grain alcohol is used).”

That being said, I prefer vanilla powder. If you decide to use vanilla extract, you can substitute the vanilla powder for 1 teaspoon vanilla extract.
Is Honey allowed on the AIP diet?
Yes, but I decided to use coconut sugar in this recipe. It’s more cost effective and works perfectly.
How to make AIP Lace Cookies
1. Preheat oven to 350 degrees. Place parchment paper over baking sheet.
2. Add all the ingredients in a bowl and stir to combined. The dough should be very wet, almost like wet sand.
3. Add 1 tablespoon of dough to the baking sheet at a time and then flatten. Leaving 3 inches between cookies. A big baking sheet only fits 6 cookies.
4. Place the baking sheet in the oven and cook for 8 minutes. They should be a little brown on the edges but not burnt. There’s a very small window before they will burn. Keep in mind that they will continue to cook after you remove them from the oven as they cool. Remove from the oven and let cool.
5. While the cookies are cooling, make the glaze. Combine all the glaze ingredients in a small bowl. Stir until combined.
6. Once the cookies have cooled, drizzle the glaze of the cookies. Serve immediately or store in an airtight container in the refrigerator.
Tips for making the BEST AIP Lace Cookies
- You will need to cook this is 2 batches unless you have multiple baking sheets.
- Remove the cookies from the oven as soon as the edges brown. They will continue cooking after you remove them from the oven, and you don’t want them to burn.
- If you have reintroduced vanilla extract, you can substitute the vanilla powder for 1 teaspoon vanilla extract.
- This is the type of vanilla extract I use.
- This is the type of carob powder I use.

- 1/4 teaspoon Salt

- 2 tablespoons Coconut Oil melted
- 1 tablespoon Carob Powder
- 1 teaspoon Maple Syrup

Ive made these a few times and cannot seem to get it right! they keep coming out more just like a really flat cookie, not with the lace work. I followed the recipe to a T! Any ideas?
They are supposed to be extremely flat. If you don't have enough oil, I could see where they wouldn't have the lace look or be as flat as they are in the picture. But it's hard to say exactly what you are doing wrong without being in the room. I'll have to try making them again to see if I can add some additional notes to the recipe. If I figure something out, I'll be sure to email you.
If these were to spread or thin out, mine didn’t. Not sure why. I may try again but until then I only give a 2 star.
If you altered the recipe is any way, it may not work according to the directions. Was your dough like wet sand before baking? If not, your measurements may have been off.
Didn’t make the glaze, but they don’t even need it. Such a crispy, yummy quick sweet treat! AIP baking is so tricky, it seems simple is best. This makes just two cookie recipes that I’ve found and will make again. These even stay crispy for a few days sealed on the counter! Thank you for these!

I used arrowroot powder instead of tapioca powder because that’s all I had on hand and it was perfect! A delicious recipe!
