I love this AIP salad dressing on my Grilled Romaine Salad but it also tastes amazing as a veggie dip. I recently shared it with my local AIP meetup group and everyone was pretty amazed at how much it tasted like the real thing. They were so surprised at how much the nutritional yeast actually tastes like cheese!
What is the healthiest dressing for a salad?
Anything homemade is going to be healthier than what you in the store. Store-bought dressing has a tendency to use unhealthy oils, chemicals, and sugar.
Do all Caesar dressings have anchovies?
Traditionally, Caesar dressing has anchovies. BUT, trust me. Just try them. They give a richness and depth to the dressing that you can’t get from any other ingredient plus they are nutrient dense and it’s something we should all be focusing on.
How long does homemade Caesar dressing last?
This dressing will last 3-4 days in the refrigerator if stored in a tightly sealed container.
How do I keep my avocado dressing from turning brown?
The apple cider vinegar is acidic enough to keep the dressing from turning a dark brown color. Keeping it tightly sealed in the fridge will also help. If you are going to make this the day before just give it a stir before servings and no one will be able to tell.

Equipment
- immersion blender or other blender
Ingredients
- 1 Avocado
- 2-3 Anchovies
- 1 Garlic Clove
- 3 tablespoons Apple Cider Vinegar
- 1/4 cup Extra Virgin Olive Oil
- 2 teaspoons Water
- 2 tablespoons Non-Fortified Nutritional Yeast
- Salt to taste
Instructions
- Combine all the ingredients into a blender or container suitably for an immersion blender.
- Blend until smooth.
- Serve immediately or store in an airtight container in the refrigerator.

Absolutely love this dressing and can’t believe how much it tastes like Caesar! I subbed out the anchovies with a splash or two of fish sauce and it was absolutely perfect. Great as a chicken burger spread or anywhere you need a dip as well it doesn’t have to be limited to salad. Great recipe!

I’m blown away by this! I just started AIP for a multitude of reasons and found your site pretty quickly. I didn’t have anchovies or the yeast… and I have the say.. even without those things, this replicates Caesar so well!!! Thank you so much! I’m a bit overwhelmed and things like this make it so fun!! I’m actually going to use this tonight as a taco dressing for my salmon and then as a salad dressing tomorrow… I’m just tickled pink! xxx

Can you sub fish sauce for the anchovies? If so, what do you think the quantity would be?

That's a great substitute! I would start with 1 teaspoon and then taste.
