    Coconut Matcha Panna Cotta

    This Coconut Matcha Panna Cotta is based on a traditional panna cotta but uses coconut milk and cream to replace the dairy. The addition of matcha gives this dessert a delicious Asian twist.

    What does panna cotta mean in Italian?

    Panna cotta means ‘cooked cream’ in Italian. Traditionally the cream is dairy based but this recipe is AIP so it uses coconut cream and milk to make it totally dairy free.

    What's the difference between crème brulee, creme caramel and panna cotta?

    Crème brulee, creme caramel and panna cotta are all cooked puddings, but crème caramel and crème brulée are made of milk, while panna cotta is made of heavy cream (at least traditionally, keep in mind this AIP dessert is dairy free). The difference between crème caramel and crème brulée is that crème caramel has a liquid caramel on the top, while crème brulée has a hard caramel layer. As soon as I figure out how to make crème brulee and creme caramel AIP friendly I’ll make sure to share.

    What is panna cotta made of?

    Panna cotta is traditionally made from heavy cream, sugar and gelatin. However, I use coconut milk, cream and honey to keep. It AIP friendly.

    How long will panna cotta last in the fridge?

    As long as you keep it covered, panna cotta will last about 3 days in the refrigerator.

    How to make Coconut Matcha Panna Cotta

    1. Heat the coconut milk, cream, and honey in a saucepan until hot but not boiling.

    2. Slowly sprinkle the gelatin over the hot mixture while stirring to avoid lumps. It helps to use a whisk.

    3. Once the mixture is totally combined, remove from the heat. Slowly sprinkle the salt and matcha powder over the hot mixture while stirring to avoid lumps. It helps to use a whisk.

    4. Carefully pour the coconut mixture into a small casserole dish (8-10 ramekins or 4-6 stemless wine glasses). 

    5. Cover then set aside in refrigerator for about 4 hours or until firm and chilled. Garnish and serve.

    • Take care not to boil the coconut milk/cream or gelatin. They will separate if boiled.

    Coconut Matcha Panna Cotta

    Here’s a 6-ingredient AIP (which means dairy, soy, nut and refined sugar free) coconut-based dessert that will be your new favorite treat. It’s perfect anytime of the year as it’s made from pantry staples! This recipe is allergy friendly (gluten, dairy, shellfish, nut, egg, and soy free) and suits the autoimmune protocol (AIP) and paleo diets.
