I’m a pickle person. My husband regularly finds me standing in the kitchen with my head in the fridge, eating pickles out of the jar. It’s a tart and refreshing snack that I love. Making pickles at home doesn’t have to involve any sort of canning equipment beyond a mason jar.
You can easily make quick pickled red onions with just five ingredients and a little time in the refrigerator. They taste delicious on their own, in salads or sandwiches. I’ve got a salad recipe in the works so stay tuned. . .

My husband loves onions. This is a great recipe.
I recently had a sandwich with pickled onions and boy did it make the sandwich. I can wait to try your pickled onions. Looking forward to your salad with the pickle onions you have on the works.
They're good, right?! Let me know what you think of the salad.
Why only 1 onion can I use 3 when company shows up 1 just won't do
Feel free to triple the recipe when you have guests over! This recipe is a small batch recipe because I mostly use it as a side and no one else in my family enjoys onions.
