A delicious recipe for Pineapple Mojitos, with spiced rum, pineapple juice, lime and mint.

I’ve just got a fun and fruity drink that my husband requested. He loves mojitos so I thought I’d surprise him with something a little different – Pineapple Mojitos! I like the idea of serving a fruity drink in the middle of winter, that you may normally serve over the summer, as it looks forward to warmer weather and reminds you of beach vacations.
This is a pretty easy drink to make and the addition of my mason jar cocktail shaker makes it even easier. I can’t believe that I waited so long before getting one. It’s a breeze to make cocktails now. Don’t forget to add the splash of club soda at the end. The pineapple and lime juice could be a little too tart for some without it.
Also, mojitos normally call for light rum but I like spiced rum with this recipe. I think it adds a nice flavor that compliments the pineapple juice and maple syrup. However, feel free to try it with light rum. If you do, let me know how it tastes!
Pineapple Mojitos
Ingredients
- 10 Mint Leaves plus 2 sprigs for garnish
- 6 ounces Rum
- 2 ounces Fresh Lime Juice (about 2 limes, plus additional lime for slices for garnish)
- 4 ounces Pineapple Juice (plus 2 slices of pineapple for garnish)
- 1/2 ounce Maple Syrup
- Ice
- Club Soda
Instructions
- Muddle the 8 mint sprigs with the rum, juices and maple syrup in a cocktail shaker.
- Place ice in cocktail shaker then shake well.
- Strain the cocktail shaker while pouring the liquid over ice in two highball glasses.
- Top off each glass with a splash of club soda. Garnish each with a slice of pineapple, lime and a sprig of mint.
