My husband is typically not a fan of salads. I think it’s a guy thing. I love them and I’ve been looking for ways to make him love them too. I tried to pull together a few things he does love like spinach, grains, and fruit into a salad. It worked! We’ve already had this salad twice this week.
I’m not always a fan of fruit in savory dishes but it’s the perfect fruit to cut the vinegar in the pickled onions and dressing. You don’t even realize they’re there until you bite into a little bit of sweetness.
Feel free to serve the salad and pour the dressing over the individual servings. I usually do this unless I’m feeding a crowd. I don’t like soggy salad leftovers and it’s the best way to avoid it.
Spinach Salad with Barley, Grapes and Pickled Red Onions
Ingredients
- For the Red Wine Vinaigrette:
- 1/2 cup Red Wine Vinegar
- 1/4 cup Extra Virgin Olive Oil
- 1 tablespoon Maple Syrup
- 1/4 teaspoon Ground Black Pepper
- 1/4 teaspoon Salt
- 1/4 teaspoon Garlic Powder
- For the Salad:
- 2 cups Red Grapes halved
- 2 cups Barley cooked
- 3 cups Spinach
- Pickled Red Onions
Instructions
- To make the dressing, combine the vinegar, olive oil, maple syrup, pepper, salt and garlic powder in a jar and then set aside.
- To make the salad, layer the spinach, barley, pickled onions and grapes on a serving plate.
- Shake the dressing and then pour over the salad.
- Give the salad a toss and then serve.

Our home and family have so many needs...I'd buy groceries, vitamins and if anything were left over, I'd love to pursue two items on my bucket list....get back into my crafts or.....buy the best teach me how to play-guitar. I hope you don't mind, but I simply cannot do all those follows etc, as I don't use half of them LOL
I would buy some Go Picnic meals and emergency essentials- power outages are common where we live. Amazon has what I need.

I would get several home items, like new towels and sheet sets and I would save some for a birthday gift for my son.
I would buy a new stove for my kitchen! Mine is in need of replacing.

What a beautiful salad! I love grapes and spinach together. It's always an interesting challenge to try and get my husband to eat salads too.
I buy almost anything you can think of from Amazon. Food, electronics, kitchen appliances, video games, clothes, books, and the list goes on and on! I keep them, USPS, and UPS very busy! 🙂
