This Strawberry Rhubarb French 75 is a beautiful pink drink that is tart and slightly sweeter than the classic French 75.
What is a French 75?
A French 75 is a cocktail made with gin, sugar (in this instance we used a flavored simple syrup), champagne, and lemon juice.
For this Strawberry Rhubarb French 75, no lemon is needed. The rhubarb is tart enough that is makes a good substitute. And we upgraded the average simple syrup to this Strawberry Rhubarb Syrup.
Can you make French 75 with Prosecco?
Yes. Any dry sparkling wine works well with this drink.
Best gin for Strawberry Rhubarb French 75
Hendrick’s Gin has floral and cucumber flavors so it’s a nice gin for this recipe. However, I used FEW Gin. It’s slightly spicy compared to Henrick's.
Can you batch French 75? Can you pre make French 75?
Yes! Well, kinda. If you want to make this in advance, combines the simple syrup and gin. Store it in the fridge until you’re ready to serve then add the champagne.
Is French 75 gluten free?
While gin comes from grains, the distillation processes eliminates the gluten so that it’s gluten free. If you’d like more information about gin and gluten, check out this post, ‘Is gin gluten free?’ (coming soon!)
Is French 75 French?
While the recipe originated in France, it was created by an American in Paris. Specifically, Harry MacElhone at Harry’s New York Bar. It is said that the name came from the French 75mm field gun and that the drink was as powerful as the gun.
Strawberry Rhubarb French 75 Ingredients
- Gin: Hendrick’s Gin has a subtle floral and cucumber flavor that works well with this drink. However, I used FEW.
- Strawberry Rhubarb Simple Syrup: Get the recipe over at this post.
- Ice Cubes
- Dry Sparkling Wine: Champagne, prosecco, or cava are good substitutes.
- Strawberry: Sliced strawberries are for garnish only. This is optional.
How to make a French 75
1. In cocktail shaker, combine gin, syrup, and ice the shake vigorously for 20 seconds.
2. Strain into chilled Champagne flute and top with sparkling wine. Add sliced strawberry and then serve.
Tips for making the best Strawberry Rhubarb French 75
- Use a dry sparkling wine (champagne, cava, prosecco, etc.) instead of sweet. The Strawberry Rhubarb Syrup is sweet enough, you don’t need any additional sweetness from the champagne.
- If you want to make this in advance, combines the simple syrup and gin. Store it in the fridge until you’re ready to serve then add the champagne.
- If you want to make this in a larger batch (12 servings), combine 2 1/4 cups Gin with 1 3/4 cups Strawberry Rhubarb Syrup in a small pitcher. Store in the fridge. When ready to serve, evenly distribute into 12 serving glasses and top with champagne. This large batch recipe makes enough for 1 bottle of champagne.
- Using a good quality gin makes all the difference. Bad gin just burns, but top shelf gin is much smoother with actual flavor. Hendricks Gin for example has floral and cucumber flavors.

- 1 ounce Gin
- 1 1/2 ounce Strawberry Rhubarb Simple Syrup
- 1 cup Ice Cubes
- 2 ounces Dry Sparkling Wine chilled
- Strawberry sliced (optional, for garnish)
