I still love the juicer I got a few months ago. Although I’m trying to get away from juicing so much fruit and focus more on veggies. I still love the Fruity Green Juice recipe that I shared awhile back but today I’ve got this Sweet Beet Juice that’s mostly beets and carrots.
I’ve played around with carrot juice in drinks as it’s surprisingly sweet for a veggie. The sweetness of the carrots and apples and the freshness of the mint really temper the earthiness of the beets. I wasn’t sure how raw beet juice would taste but it’s actually really good. You’d never know that the drink is mostly veggies. If you’re interested in juicing the healthy way but don’t want to sacrifice flavor – this recipe is for you!
I would be very, very careful about getting the juice on any porous surface. Beets are a beautiful bright pink color, which is extremely effective at staining just about anything it touches. Don’t feed this drink to your toddler as he’s standing over a rug or sitting on the couch. Everything will end up pink. Guaranteed!
Since Valentine's Day is approaching, this will be my drink of choice as I'm still pregnant. Like I said above, it's a beautiful pink color so while you should keep it away from your couch, it's definitely appropriate for the holiday.
It's nice to take an evening to say I love you to your spouse or partner on Valentine's Day. Festivities will be toned down this year as I'm starting to slow down as I get closer to my due date. I probably won't be making any grand romantic meals this year and may just make some juice and serve it to my husband in a fancy wine glass. We can cheers to our first Valentine's Day as a married couple and the last before our family of two becomes three.
Sweet Beet Juice
Ingredients
- 5 sprigs Mint
- 2 Apples cored
- 2 Carrots ends trimmed
- 1 Beet peeled
Instructions
- Place the mint into the chute of the juicer.
- Then add the apples, carrots and beets into the juicer.
- Turn the juicer on high and press (using the plastic press) the fruit and veggies into the juicer.
- Stir the juice and then pour over ice.
- Serve immediately.

First of all, I would spend it on a juicer! I recently discovered the joy of juicing. My juice to go is: 2 beets, 2carrots, 1 orange, 1/2 pink grapefruit, 1 pomegranate, and 1 inch piece ginger. It's sooooo good!
The thing is; I don't have a juicer, so I blend all the ingredients and strain them through a nut milk cloth. I don't mind that it's time consuming, but I end up having pink hands. It doesn't come off for at least 1 day (and as a nurse, I use a lot of disinfectants)!

My family loves green smoothies and my kids are always open to whatever ingredients we put in them. I love the idea of using beets. The color is just beautiful! I'm excited to try this combo. It will be a nice change.

Juicing hasn't really taken off like green smoothies. However, when you're juicing mostly veggies, it's really good for you. If you know the right combinations, it can taste great too! This recipe is definitely a keeper. It's worth dusting off and firing up the old juicer!

I wanted to try juicing beets because they are pink. I just thought that it would be cool to have a pink drink. Luckily the recipe turned out pretty well. I love it.
