AIP Hot 'Chocolate'

This AIP Hot Chocolate is sweet, thick and chocolatey, even with carob (not chocolate). It takes just a few ingredients and less then 10 minutes to make this delicious AIP hot drink.

Instructions

  • Add the water to a small saucepan and bring to a boil.
  • Add the remaining ingredients to the water, whisk until smooth and cook until heated through and just before it boils.
  • Remove from heat and divide amongst two mugs and serve immediately.

Notes

  • Make sure to use coconut cream that’s AIP friendly. I like this brand but always check ingredients before purchasing. 
  • If you tolerate vanilla extract you can use that instead of vanilla powder but add it at the end. Additionally, you will need 1/2 teaspoon of extract. 
  • Make sure to use vanilla powder that’s pure vanilla and doesn’t contain additives. I use this brand. It’s expensive but you use less than extract and it lasts a long time.
  • You can add the sweetener of your choice, but I prefer maple syrup or honey.
