AIP Ginger Chicken and Asparagus Stir Fry

It only takes 7 ingredients and 30 minutes to make this delicious AIP Ginger Chicken and Asparagus Stir Fry. Serve with some cauliflower rice and you‘ve got a meal!

Ingredients

  • 3 tablespoons Fresh Ginger chopped
  • 2 Garlic cloves
  • 1 Onion roughly chopped
  • 1/2 cup Chicken Broth Homemade is best
  • 1 tablespoon Extra Virgin Olive Oil
  • 1 pound Chicken Thighs cut into slices about 1/2 inch thick
  • 1/2 teaspoon Salt
  • 1 bunch Asparagus cut into 3 or 4 pieces

Instructions

  • Combine the ginger, garlic, onion, chicken broth and oil ina container appropriate for an immersion blender. Blend until smooth.
  • Sprinkle the salt over the chicken and set aside.
  • Add the ginger mixture to large frying pan over high heat and let cook for about 2-3 minutes.
  • Next add in the chicken and cook for another 3-4 minutes or until cooked through.
  • Finally add the asparagus and cook for another 2-3 minutes or until the asparagus are cooked through but still crisp.

Notes

  • The ginger in this dish is intense, almost spicy.
  • This dish goes well with AIP Cauliflower Rice
