Strawberry Rhubarb French 75
This Strawberry Rhubarb French 75 is a beautiful pink drink that is tart and slightly sweeter than the classic French 75.

Jigger optional, any measure cup will do
In cocktail shaker, combine gin, syrup, and ice the shake vigorously for 20 seconds.
Strain into chilled Champagne flute or coupe and top with sparkling wine.
If using, add sliced strawberry and then serve.
- Use a dry sparkling wine (champagne, cava, prosecco, etc.) instead of sweet. The Strawberry Rhubarb Syrup is sweet enough, you don’t need any additional sweetness from the champagne.
- If you want to make this in advance, combines the simple syrup and gin. Store it in the fridge until you’re ready to serve then add the champagne.
- If you want to make this in a larger batch (12 servings), combine 2 1/4 cups Gin with 1 3/4 cups Strawberry Rhubarb Syrup in a small pitcher. Store in the fridge. When ready to serve, evenly distribute into 12 serving glasses and top with champagne. This large batch recipe makes enough for 1 bottle of champagne.
- Using a good quality gin makes all the difference. Bad gin just burns, but top shelf gin is much smoother with actual flavor. Hendricks Gin for example has floral and cucumber flavors.

- I used a jigger to measure out the liquids for this drink. It’s great for cocktails as it measures under 2 ounces at a time. However, any small measure cup works.
