This AIP Lemon ‘Butter’ Artichoke Dipping Sauce is a classic condiment for grilled, steamed, or baked artichokes. It’s only a few ingredients and take less than 5 minutes to whip together.
Having lemon and butter with artichokes as a dip is one of my all time favorite food combinations. Being AIP, dairy is initially removed. However, I still wanted to dip my artichoke leaves into a buttery sauce.
I initially played around with just olive oil but it just didn’t have the depth of flavor. So after a little tweaking and a lot of artichoke dipping, I settled on this AIP Lemon ‘Butter’ Artichoke Dipping Sauce.
What to dip artichokes in?
Butter and lemon is the classic artichoke dipping sauce. However, there are other options.
- Cilantro Avocado Dip (The recipe can found along with my Grilled Artichokes)
- Mayo (Primal Kitchens has an avocado mayo that is good but please note that it includes eggs which is an AIP reintroduction)
Here are my tips for making the best AIP Lemon ‘Butter’ Artichoke Dipping Sauce.
- Don’t use garlic salt for this recipe. It has to be garlic powder otherwise you’ll be doubling the salt.
- I love and recommend Simply Organics garlic powder for this recipe. I’ve noticed that brands have different textures when it comes to garlic powder. Some are a super fine powder but most are granules. Simply organics are granules but they are small. All the other brands I have found all taste very different. I like this one the best because it actually tastes like garlic, doesn’t clump together and doesn’t taste like I’m munching on sand.
- Use a high quality olive oil. You’re going to need to love the taste because it really shows through since this recipe has so few ingredients. I recommend California Ranch Extra Virgin Olive Oil.
- If you want to turn this into a paleo dipping sauce, just substitute the olive oil for melted ghee.
What to eat with artichokes and my AIP Lemon 'Butter' Artichoke Dipping Sauce?
Since fresh whole artichokes are about eating with your hands, I like to eat other finger foods. Here are a few AIP recipes:
- Gluten Free Flatbread (Totally AIP! Coconut Free as well)
- Grilled Beef Skewer with Basil Marinade
- Baked Sweet Potato Fries
- Cantaloupe and Prosciutto
- Strawberry Salsa
- Tilapia Lettuce Wraps with Mango Papaya Salsa

So good! I subbed green onion for garlic to make it Low FODMAP. I added mushrooms and nutritional yeast to make a butter sauce for cassava noodles. Thanks for the great idea!
