This Mint Green Sun Tea is an AIP Diet green tea that’s a very refreshing and easy way to upgrade regular green tea.
Sun Tea Benefits
If you’ve never had ‘sun tea,’ it’s just tea that’s been brewed by the sun. It’s a great way to make big batches of tea during the summer without turning on the store or using the microwave.
If you have mint growing in your garden, you know that it grows like a weed. It’s a great way to use up the mint without letting it go to waste. Just don’t leave the mint in there too long (beyond what the recipe calls for). The mint flavor begins to turn after a certain point.
How to make sun tea with mint leaves
1. Fill 1 pitcher full of water. The pitcher should hold about 2 quarts. Drop the mint and tea bag into the pitcher of water. If the mint is not fragrant, then you may need to muddle the mint leaves.
2. Cover with a towel and secure with a rubber band, if it doesn’t have a top. Place the pitcher outside in the sun. The heat of the sun is what brews the tea.
3. Let the pitcher sit in the sun for about 8 hours. One you have finished brewing the tea, remove the tea bags and mint.
4. Add the lemon juice then stir. To serve pour over ice with a slice of lemon and sprig of mint.

- Use fresh mint leaves. As mint ages it can smell and taste musty. It’s gross and will not taste good in the tea.
