Curl up with a hot cup of AIP coffee in the morning. It uses carob and chicory root to give it the taste of coffee without the inflammation.

Is coffee allowed on AIP?
Nope. Coffee is not allowed during the elimination stage of the autoimmune protocol. Fun fact: it’s also not a bean. It’s actually a seed. If you’d like to get into the science behind coffee and autoimmune disease the Paleo Mom wrote a post on it.
Coffee may be a reintroduction, but this recipe is actually made of all AIP friendly ingredients. No coffee beans, I mean, seeds in sight.
How to make AIP Coffee
1. Combine the water, chicory root and carob powder in a small saucepan. Stir to combine. Bring to a boil over low heat.
2. Add the maple syrup and coconut milk and then continue cooking until it’s heated through.
3. Remove from heat, strain as you pour into two mugs and serve hot.
Tips for making the best AIP Coffee
- Make sure to purchase carob powder that doesn’t have any additional ingredients.
- I used this brand of carob powder. You can find it online here.
- I’ve never found chicory root in a grocery store, but you can find it online.
- Make sure to use coconut cream that’s AIP friendly. I like this brand but always check ingredients before purchasing.

Hi, I'm starting the AIP this week and found your site and this recipe. Question.....can this be made for several cups and placed in the refrigerator for the next day?

I made the cikoria and carob coffe (without maple syrup) today. It was nice and filling, perfekt to bring on day outside. I had it with a saffron sweetpotato cake.
